What is yam noodles?

Made from the bulb of the konjac yam, also known as yam-like, yam noodles have been a staple in Japanese and Chinese diets for centuries. To make noodles from this ingredient, konjac is made into konjac flour and mixed with still water and limewater, a calcium hydroxide solution that helps hold the mixture together so it can be cut into noodles.

Another common name for yam noodles is Shirataki noodles. It means “white waterfall” in Japanese, and the nickname comes from the fact that the noodles appear translucent, almost like a waterfall when poured into the bowl. These almost clear noodles didn’t have much flavor. What the food lacks in flavor, it makes up for in filler ingredients.

How Is Konjac Noodles Homemade?

Here, we shall introduce you to a method of how konjac noodles is homemade. Note that there may be various ways of making it, and this is just one example.

  1. Wash and peel the konjac potatoes (it is recommended that rubber gloves be worn to prevent irritation to the skin).
  2. Cut the washed and peeled potatoes into cubes 5-6 cm in size.
  3. Boil for 10-15 minutes. The potatoes should then be soft enough for a chopstick to pass through without resistance.
  4. Next is the grating stage. Take 500 ml of lukewarm water with the 250g konjac potatoes, and mix using a mixer.
  5. Put the contents of step 4 into a container (pot for stirring)  and leave for about 1 hours.
  6. Next, you need to make limewater. Combine 1.7 g of edible calcium hydroxide and 100 ml of water used for dissolving.

How To Store Shirataki Noodles

Shirataki noodles can be stored in the dry and cool place or refrigerator for till noodles past their expiration date if left unopened. When buying konnyaku noodles, it will come with a special liquid. Make sure you don’t throw this away when opening it, however, as this high-pH water will allow you to store leftovers in the fridge for up to a month. If you happen to throw the liquid away by mistake, submerge the leftovers in water, and change the water every 2 or 3 days, you should be able to keep it for a week or so.
